For Spring 2026, Rainbow Trout became the perfect canvas.
Two Restaurants, Two Completely Different Experiences
Starting May 18, both Tarpy's and Rio Grill will debut new Rainbow Trout dishes that reflect the personality of each restaurant while still celebrating the freshness of the season.
At Tarpy's, the approach leans refined and coastal California-inspired. The Rainbow Trout is paired with French beans, blistered tomatoes, capers, garlic, shallots, toasted almonds, and citrus beurre blanc. The result feels elegant without becoming overly complicated — bright, balanced, and ideal for a relaxed spring dinner in Monterey.
Over at Rio Grill, the same ingredient takes on a bolder personality. The Crispy Skinned Rainbow Trout is served with creamy sunchoke purée, asparagus, and charred corn-artichoke relish, creating a dish that feels vibrant, textured, and distinctly Rio Grill.
That contrast is what makes seasonal dining exciting for us. One ingredient can tell two entirely different stories depending on the chef, the atmosphere, and the inspiration behind the menu.
Spring Menus Designed Around the Monterey Season
Rainbow Trout may be the highlight this spring, but it arrives alongside several other seasonal additions designed to reflect the energy of dining on the Monterey Peninsula this time of year.
At Tarpy's, guests will also find:
- Mediterranean Mussels with coconut-curry broth, roasted garlic, ginger, and basil
- Blue Lump Crab Cakes with fennel, pea shoots, and pineapple slaw
- Maple Leaf Duck Breast with huckleberry reduction and prosciutto chips
Rio Grill's spring additions include:
- Soft Shell Crab with glazed soy noodles and roasted garlic-lemon aioli
- Heirloom Tomato & Burrata Salad with grilled peaches and basil vinaigrette
- Frutti di Mare with salmon, clams, mussels, prawns, and white wine tomato broth
These dishes are designed to feel seasonal, approachable, and layered with the kind of bold flavors people look forward to during spring dining in Monterey.
More Seasonal Additions Are Still Coming
Montrio will also debut its own Rainbow Trout-inspired seasonal menu additions beginning June 15, this spring.
